While Sam was away at the Florida-LSU game this weekend, I decided to bake with the kids. We've been overrun by bananas lately, and we can't keep up with eating them before they turn brown. Since I didn't want to make another banana bread, I opted for banana cupcakes. I used the recipe from Bakerella, found here.
I made a cream cheese frosting for them, and the kids helped me with the clean up.
Oliver even tried to share with Cookie Monster, but CM isn't as into cupcakes as he is cookies.
Madeline and Oliver decorated their cupcakes with some sprinkles that Maddie picked out at Publix. I would not have chosen Disney Princess sprinkles for banana cupcakes, but they did go well with the pink frosting (color chosen by Maddie, of course).
I never thought that putting sprinkles on cupcakes would be taken so seriously. Or be so much fun.
The verdict? Banana cupcakes are delicious. The recipe was a good one - just the right amount of sweetness. The kids were entertained and got a yummy treat at the end. I got my fix of cream cheese frosting. And we got rid of two brown bananas.
